Tempeh, feta, and pine nut salad


  • Mixed greens

  • Multi-grain tempeh (Lightlife brand is good)

  • Pine nuts, toasted

  • Feta cheese, crumbled

  • Avocado, cubed

  • Cherry tomatoes, halved

  • Red onion, thinly sliced

  • Cilantro, roughly chopped

  • For the dressing:

    • Horseradish mustard

    • Olive oil, salt, pepper


  1. Grill the tempeh in a nonstick pan with neutral oil until golden brown.

  2. Whisk the mustard, olive oil, salt, and pepper together with a fork.

  3. Toss in a big bowl and enjoy!.
