Tempeh, feta, and pine nut salad
Ingredients
Mixed greens
Multi-grain tempeh (Lightlife brand is good)
Pine nuts, toasted
Feta cheese, crumbled
Avocado, cubed
Cherry tomatoes, halved
Red onion, thinly sliced
Cilantro, roughly chopped
For the dressing:
Horseradish mustard
Olive oil, salt, pepper
Steps
Grill the tempeh in a nonstick pan with neutral oil until golden brown.
Whisk the mustard, olive oil, salt, and pepper together with a fork.
Toss in a big bowl and enjoy!.
