Roasted red onion salad
Red onions are the best onions, and you'll know this once you've roasted them!
Cut a bunch of red onions into eighths and roast in olive oil, salt, and pepper for about 40 minutes
Mix chopped walnuts, green or red chile, garlic, red wine vinegar, olive oil, and salt in a bowl
Serve the onions on a bed of arugula. Top with the walnut dressing, goat cheese, pomegranates, and parsley
