Roasted red onion "salad"
Red onions are the best onions, and you'll know this once you've roasted them!
- Cut a bunch of red onions into eighths and roast in olive oil, salt, and pepper for about 40 minutes
- Mix chopped walnuts, green or red chile, garlic, red wine vinegar, olive oil, and salt in a bowl
- Serve the onions on a bed of arugula. Top with the walnut dressing, goat cheese, pomegranates, and parsley
