Miso ramen

  • Create a broth with water, kombu, and dried shiitakes

  • Stir in some Miso, be generous (life is short)

  • Add soy sauce and fish sauce (optional) to taste

  • Separately, make The best broccolini (or something similar with soy sauce, garlic, ginger, and chiles)

  • Add ramen noodles (or rice noodles if GF) to the broth, along with a few eggs (in shell)

  • After 6 minutes, turn off the heat. Remove the eggs and peel.

  • Serve with broccolini, sliced egg, and (optionally, but deliciously) black garlic

Some alterations:

  • Add tofu, why not?

  • Add pickles, or Pickled red onion for extra acid

  • Add sesame seeds and/or sesame oil to finish
