Miso ramen
Create a broth with water, kombu, and dried shiitakes
Stir in some Miso, be generous (life is short)
Add soy sauce and fish sauce (optional) to taste
Separately, make The best broccolini (or something similar with soy sauce, garlic, ginger, and chiles)
Add ramen noodles (or rice noodles if GF) to the broth, along with a few eggs (in shell)
After 6 minutes, turn off the heat. Remove the eggs and peel.
Serve with broccolini, sliced egg, and (optionally, but deliciously) black garlic
Some alterations:
Add tofu, why not?
Add pickles, or Pickled red onion for extra acid
Add sesame seeds and/or sesame oil to finish
