Miso soup
Ingredients
Kombu
Bonito flakes (optional)
Miso paste
Scallions (optional)
Silken tofu (optional)
Steps
Add 6x6" kombu to 4 cups water and let sit 30 minutes
Slowly bring to a boil and remove kombu
Add 1 cup bonito flakes, simmer for 1 minute, then let sit for 10 minutes; strain
Bring back up to a simmer and dissolve 3Tbs miso paste
Add scallions and tofu and turn off the heat
