Miso soup

Ingredients

  • Kombu

  • Bonito flakes (optional)

  • Miso paste

  • Scallions (optional)

  • Silken tofu (optional)

Steps

  • Add 6x6" kombu to 4 cups water and let sit 30 minutes

  • Slowly bring to a boil and remove kombu

  • Add 1 cup bonito flakes, simmer for 1 minute, then let sit for 10 minutes; strain

  • Bring back up to a simmer and dissolve 3Tbs miso paste

  • Add scallions and tofu and turn off the heat
